A quick and aromatic green curry.

Ingredients

Sauce Ingredients:

  • Shallots

  • Garlic

  • Galangal

  • Lemongrass

  • Turmeric

  • Green chilli

  • Spices

  • Virgin coconut oil

  • Fish sauce

  • Coconut milk

  • Oyster sauce

  • Monosodium glutamate

Main Ingredients

  • Australian beef topside

  • Eggplant

  • Pea eggplant

  • Baby corn (peeled)

  • Basil leaves

Additional Ingredients

  • Chicken stock

  • Fried shallots

  • Fish sauce

  • Sugar

  • Salt

  • Oyster sauce

  • Coconut cream

Method

  1. Pour 400 ml of water/chicken stock into a pot and bring it to a boil.

  2. Once boiling, add the green curry sauce, add coconut cream, and stir until fully combined.

  3. Add the beef to the pot and cook until the meat becomes tender.

  4. Add the vegetables and continue cooking until they are fully cooked through.

  5. Adjust seasoning accordingly.
